Corn and pepper salad سلطة الذرة و الفلفل الحلو



Ingredients:
1 Small head lettuce
1 cup cooked  corn
1/3 cup black olive slices
½ each green and red pepper
2 spring onions
1 large tomato
3 tbsps grated cheddar or other strong cheese
½ tsp garlic powder
Juice of 2 small limes
1 tbsp finely chopped coriander leaves
1 tbsp white grape vinegar or any other light coloured vinegar
Salt
2 - 3 tbsps  olive oil

Directions:
Wash lettuce and leave to dry, chop into bite size pieces and put in a salad bowl.
Chop spring onions in to fine slices with some of the green parts, cut tomato in to thin wedges and remove the seeds, chop peppers into small squares
Top lettuce with, corn, olives, onions, peppers, and tomatoes.
For dressing, mix lime juice, garlic powder, vinegar, oil and a little salt and pour over salad, toss and sprinkle with coriander and cheese and toss again.
Alternatively you can mix all salad ingredients with the dressing except the lettuce, divide lettuce in individual plates and put a scoop of the other ingredients in the middle, serves 4.
