Courgettes in Yogurt شيخ المخشي


Description:
A syrian main dish, served with rice.
Cooked yogurt is a base for many dishes, some people add an egg or an egg white to it but I never felt the need to do that.

Ingredients:
15 small courgettes
300 gms ground beef or lamb
1 small onion
2 Tbsps pine nuts
vegetable oil
1 kilo yogurt
2 Tbsps cornflour (cornstarch)
salt and blackpepper

Directions:
Fry pine nuts in a little oil till golden, remove and set aside. Chop onion small and add to pan with ground meat and fry till meat is dry and done after seasoning with salt and pepper.
Hollow the courgettes with the appropriate tool, mix meat and nuts and stuff the courgettes, heat oil in frying pan and fry stuffed courgettes on all sides till lightly browned.
In a cooking pot put yogurt and salt to taste and stir till smooth, add cornflour dissolved in a cup of cold water, put a on a medium flame and stir continuosly till it comes to a low boil, cook for a few minutes still stirring or else it will seperate.
Add courgettes, cook further on low heat, stirring carefully once in a while about 10 more minutes. Serves 2-4
